what is the difference between texts that say "text only" and those that don't have that? I see no price difference o.o

Text only possibly means theres no solution manual included.
Most of the time you do not require optional material, so wait till class starts and ask the prof.

Generally Text Only are only used books, they don't come with what the new book would come with.
Things that the new book could come with:
Solution Manual(s)
CDs
Wiley (Some kind of online application that tests you)
Product Keys (For first year math we needed to have the keys to access the online testing application for marks. You can also buy the keys online).

Not all of the courses are up yet, period. They're still hiring profs and waiting for the profs to submit what books they'll be using...depending how long that takes, some courses might not be up until right before school starts :(
Not that it really matters until then anyways, but I like to have a good idea of how much money I'll be spending

Yeah, most of the time i wait 2-3 weeks into school anyways to purchase books, that way you know what books are required and you can save a few $$
