How will the workload be if I were to take cell bio, genetics and physio all together as opposed to cell bio with ecology and genetics with physio?

Cell bio and physio have pretty heavy courseloads. If you can take them apart then good, but any schedule in second year biology is manageable.

Psych 2AP3.. I wouldn't say it has a high workload (there are no assignments at all, no tutorials; there are only 2 midterms and the exam). That said, there is a fairly substantial amount of reading that is expected. Furthermore, the tests are definitely challenging -- you'll be tested on the most minute of details mentioned in class.

That said, I took 2C03, 2A03 and Psych 2AP3 all in one term last year and it was very manageable.
