Whatever you're interested in.

What's easy is subjective, heavily dependent on your strengths and your interests.

KIDDING. I agree with the above.
Easy is so subjective. I took econ 1b03, and it's supposed to be a bird course. However, it was one of my poorly done courses because of my lack of interest.
So, do what you like. Of course, there are certain courses in certain subjects that may be considered easier than others.

However, stats 2b03, biochem 2ee3, astron 2b03 (only term 1) are "easy" electives that I know of.

Agree that you should pick based on interest. However, from my experience and that of my close friends...

Music 2ii3 - Pop music
Earth Sci 2gg3 - Natural disasters
Earth Sci 2ww3 - water
Soc Sci 2j03 - Intro to stats
Any econ with Rashid Khan, so 2h03, 2d03, 2j03
Geo 2rc3 - Canadian geo
Geo 2ru3 - US geo
Any of the soc sci Mohawk-McMaster diploma courses (business, nonprofit management)
Voros' soc sci classes (Canadian Children, Adolescents, Women, etc) I've heard can go either way because of her testing style, some people just don't do well but I found a lot of the material to be common sense

That said, any class you go into expecting a 12 will likely not go the way you want it to. Every class requires effort to do well.
