There's always the option of not taking orgo unless you absolutely love chem. Everyone seems to be under the impression it's 100 percent necessary for MCAT's and med school (it's not).

Need it for UBC and for some American schools.

Fair enough, I just know that there is a lot of misconceptions involving orgo and prerequisites and the MCAT.

Yup that's my reason too.

Anyways, can anyone tell me if the overlap between 1AA3 and the orgos is small enough that a one year gap won't make a difference?

Yes. Even if you forget everything the textbook has a few chapter at the beginning to refresh your memories if needed.

Look, to clear things up a bit.

When you take it is irrelevant - if you feel you have to take it (or if you decide you want to, which is not a bad idea by any means) then take it in second or third year, ideally the year you will have fewer difficult courses.

Taking a 1 year break from 1A03/1AA3 will not be harmful, nor is Chem 1AA3 a predictor of your marks for the two organic chem courses.

You don't have to take them in the summer or anything like that.

Do all the old tutorials, do the practice midterms/assignments before midterms, and go to tutorial/ask questions if you don't understand something. If you do this, you can 12 both of them.
