You'd really need to look into each med school's specific requirements. Some schools require a full year of physics with labs, some require you to take a certain number of units of english or a humanities course, etc. In terms of prepping yourself for the MCAT, from what I've heard, it covers chemistry, biology, physics, organic chemistry, verbal reasoning and as of 2015 it will include a social science-type portion. I doubt you'll need any upper year biology courses to do well on the mcat, so organic chemistry and a bit of review for the other sections (based on your first year knowledge) will probably be enough.
