I am putting together my timetable, do you think i should have a class starting at the same time as another one finishes? Is it better to avoid this if possible?

Your timetable looks fine to me. 1st sem i noticed that you have Psych Tut and Econ back to back ..PC AND MDCL are quite close so can make it in time.

For your 2nd sem HSC AND MDCL are right beside each other , so you should be able to get there within 3 min.

is PSYCH 1X03 really only a one week tutorial and that's it?

No , you also have online recorded lectures posted weekly that you need to watch and take notes
