My question regarding this is, do we find out which rez we get and whether we get our desired choice
room or not? Or do we just get a confirmation that we will get a room somewhere on campus?

You just get a confirmation that they received your application and such. But I got my actual room assignment after final marks in mid-June last year. The link you mentioned above gives you the 2 dates. March 3rd and mid June-July.

March 3rd they just tell you if you are guaranteed a room or are on the wait list. The actual room/residence is revealed sometime in July.

Also when applying for rez, they ask us to give them our room preferences. They say that three is a minimum. Does that mean that I will be assigned a room from one of those three choices? Or is there a possibility that I won't get any of my three choices?

There is definitely a possibility that you could get a room that wasn't on your list of preferences. But as an upper-year student, it's not very likely for that to happen compared to a first-year student for example.
