Spring term
I was looking at the master undergraduate table, and it suggest that there is a term of school after the Winter Term (Jan- ~April); I'd like to ask, how long is this term? I might have to take a course next summer so I was just wondering.

The spring term is from May to June. This year it started May 3rd. It ended on June 14th for me.

Yepp, it's the spring/summer terms. Spring term runs from May to mid-June, while the Summer term runs from mid-June till early August. Each term is seven weeks long, and depending on how heavy the course is, it's 2 days per week, three hours per class. THere is not much variety in spring or summer courses. You can check what's available in the Spring/Summer course Timetable. But, the spring/summer 2011 timetable won't come out till March or April 2011 of next year.

The spring/summer term runs from early May to early August. It's actually broken in to two terms: early May to late June, and late June to early August; each term is 6 weeks long (totaling 12 from May to August).

So basically you have to finish the course(s) within those 7 weeks? Or are they spread throughout both terms?

Nope. Spring term is considered one term. So, if you take a 3-unit course, you finish it in that time. If you take a 6-unit course (equivalent to a full year on a normal school day), that would take up both the spring and the summer combined.
