I know it's early, since I haven't even started first year, but still ...

My first choice for post-secondary was the Forensic Anthropology program at U of T
however, I knew I didn't have the marks for it [nor the maths for that matter] and applied only to Anthropology programs

I was wondering who I would contact to give me a better idea on requirements to apply to the program after first year. Should I talk to an academic advisor at mac? Email an academic advisor at U of T? Ask Santa?

You'll want to contact academic advisors in both universities. You'll need to know what courses you have to take to get into UofT and you'll have to know the course equivalents to those at McMaster.

Yeah, an academic advisor in your faculty would be best.
