Ultra-Easy Lentils
Ultra-Easy Lentils
2 tablespoons vegetable oil
1 medium onion, minced
1 medium carrot, peeled and cut into small dice
3 large garlic cloves, minced
3 tablespoons peeled, minced fresh ginger
1- 16-ounce pkg. lentils ( about 2 cups)
1/2 teaspoon salt, plus more to taste
Freshly ground black pepper
5 cups water or vegetable broth
Heat oil over medium heat and add onion, carrot, garlic and ginger. Cook until garlic and ginger are aromatic, 1-2 minutes. Add lentils, salt, pepper and water or broth . Bring to a boil, then cover and reduce the heat to low. Cook for 40 min, or until lentils are tender. Season with salt and pepper. This dish does not have a lot of broth, and I serve it on a plate over rice or couscous. Serve with baked acorn squash quarters in the Winter or with sliced fresh fruit and muffins in the Summer. Leftovers freeze well!

Preparation time: 45 MIN
This recipe was extremely easy to make and took very little preparation time. You're also likely to have these ingredients already at your disposal. In the end, it was delicious and I have plenty left over for later. Perfect for a student's diet.
