Warrior Rice Bowl

Fresh vegetarian restaurants in Toronto and OMG the food was AMAZING!
While I was there, I had the "warrior" rice bowl. It was brown rice, topped with coconut curried chick peas and steamed.. well I'm not sure what it was on top for sure but it was some sort of leafy vegetable. This was probably one of the best meals I've had in a loong time. Even better than Bridges' chili... and that stuff is amazing.
I just tried to make my own version and here's how.. it was extremely simple and you can use things you likely have in your pantry.
Cook your desired amount of brown rice however you like to do it.
Then, to make the dressing, I used this recipe:

I didn't have any cilantro or ground coriander but it still turned out splendidly. I also didn't use onions because... well I just don't like them. Also take note that this recipe has a calculator on top so you can change the amount of servings you want to make.
My rice cooker has a steamer that you can put on top so it was all really convienent. I chose to steam some bok choy. Steam the stem for 6 minutes and the leaves for 3 minutes.
Put it all together and om nom nom nom nom nom!!! YAY!
