Do your 4 sessional GPAs get divided over 4? Or, is there a method unique to the final GPA?

I'm pretty sure your CGPA is just the average of all your courses together, with their respective normal weightings (i.e. 3 unit courses worth 3, 6 unit courses are worth 6).

does anyone know what marks count when applying to graduate school?
is it just the courses in your final year or all courses together

That depends on your school and program. I suggest looking into individuals schools for that information. It should have all that information on their websites.
