I'm now unable to see English 1A03 in first semester, which is definitely being offered.
It doesn't say "Term 1 Full" any longer, it's not even there to select. There's just "Term 2 Full".
Does anyone know why this is?
Also, will this change when school starts so that when/if people decide to drop you can still somehow get in the course?
I've tried emailing the department, but I think they're failing miserably at their jobs because they don't know what the hell they're talking about + don't even email back.

Emailing any department at this time of year always leads to a long wait; everyone is busy getting things up and running for the new year. Your best bet is always to call them, no matter what. Emails are answered in the order they are received, with more important emails jumping the line.
It's possible that the class isn't being offered any longer, and that's why its not showing up anymore. That happened to me once; I went to register in a class that according to the master time table was offered, and when I went to select the class it was no longer there. After calling the department it turns out it no longer was.
