is everything done online in level 2 + courses. (like in level 1)

or is there more in class evaluations and learning.

Depends on the course. The main evaluations are midterms/essays and exams, then some classes have labs, assignments/projects, quizzes, presentations and/or participation.

Going from first year to second year right now, it feels like everything is relatively the same, except that I have a few more labs (Bio major). Also less online quizzes I guess.

I think it depends on your program. Mine is pretty small, so there's much less of an online component to it.

Also, there is a ridiculous push for online components to courses in first year, and I'm not entirely sure why. Not a single one of my courses had an online thingy that you needed to buy for the course when I was in first year Life Sci. Now, math, chem, psych, kin 1Y03/1YY3 all have some sort of online component--it's so confusing! And, only physics had mandatory iClickers...now, you need them for practically every class!

I am guessing a lot of first year courses have online assignments is the fact that many people are taking the course. Consider 1st year engineering, most people are taking the same set of courses and each has >800 people taking it. It is impossible for the TAs to mark those assignment every week. So by making everything online, they saved a lot of time and work.
