You should talk to an academic advisor to be sure, but I don't think so.
Once you are eligible for your degree you need to graduate, they won't let you graduate and then stick around to "update" your degree by adding another designation to it. I know this is true for co-op (you can't graduate and then come back to finish your co-op terms and get the co-op designation) and I'm assuming it's the same with a minor, since on its own the minor isn't a degree. If you wanted to come back for a year and turn one of those minors into a second degree, which many people do, then that should be fine, but I don't think they'll let you come back to a minor onto your degree.
Alternatively you could consider overloading and/or summer/online courses, or deliberately not taking a course that you need to graduate so that you can delay graduation.
