I've taken full time summer courses for the past four summers. I've liked them a lot most of the time, but there are some down sides (as well as positives). It is very fast paced, so you have to keep up with the readings and make sure you understand concepts. The class will be over before you know it. Classes usually consist of one big assignment, a smaller one and an exam. But that's just been my experience and I've taken all humanities courses. Also, most of the courses I've taken are ones that aren't usually offered in the shool year (Monsters & Magic, Creative Writing etc), so I don't know how they compare to the same courses taught in the regular school year. However, I do have one course this summer that's hardcore because the prof (who's tenure) hasn't cut any of the assignments from when he teaches it in the regular school year. So, it's a lot more work than your typical summer classes. Also, generally summer courses are taught by sessional profs (not tenure), so it can be a mixed bag because you don't know what to expect. I've had both great experiences and horrible ones, although the good outweigh the bad.
Overall, humanities courses are generally not too intense, although there is a lot of reading!
