Summer School Courses
What types of courses are usually available during the summer? In particular, I am strongly considering taking Economics and/or Latin (or any other language course) during the summer. I am almost certain economics will be available, but Latin (or any other language course) I am unsure of, does anyone have any idea?

I would say many first year courses are available in the summer (year I econ AND Latin courses were offered last summer), but fewer upper year courses. Some second year courses are offered though. It varies from department to department.
In the course timetable, select "Spring/Summer 2009" (the first box) rather than "Fall/Winter 2009/2010, which can give you just an idea of what may be offered. For some departments, however, course offerings vary from year to year. You can try directly at the department's website to see if they offered it last year, but it doesn't guarantee that it will be offered this summer.
Or you could just wait until March when the timetables come out. Some departments will post their summer lists early though so you may want to give that a try too.

Last summer, most language courses were not offered. I would assume the same will occur this summer.

I don't think language courses would be offered in the summer... how much demand can they really be?
But when I was looking into doing most of my math minor in the summer, almost all the first and 2nd courses were offered in both terms. I'll assume the same for the big classes like physics, chem. etc.

Same as the school year. Around $500 per course.

Can you only take a maximum of one course per term for spring/summer courses?

You can take two per term, sometimes more if you are able to take day and evening classes.

The course list comes out sometime during March i believe, not sure though. However what i can tell you is that courses that are in high demand or are needed for a pre-requisite of some sort are usually offered, last year i know of these courses offered:
Bio 2B03
Math 1A03/1AA3
Chem 1A03/1AA3
Physics 1B03/1BB3
Chem 2OA3/2OB3
Possibly Bio 2D03 (Plant bio?)
Thats the stuff i remember, i think Psych 1X03/1XX3 was also offered. So most first year science courses tend to be offered in the summer, as well as SOME second year courses however if you plan to take a course thats usually specific to a program that isnt too big then don't expect those courses. For example Biochem 2EE3 i think was available as well as 3G03 but the courses specific to Biochem students werent available. No Chembio courses were available either. I don't think many Chem courses other than orgo are really offered either.
Just a rough guide.

Go to the master timetable at:
https://adweb.cis.mcmaster.ca /mtt/
Under session, choose "Spring/Summer Session 2009". You can see a full list of what was offered last year during the Spring/Summer sessions. It's doubtful that it would change too much this year.

some departments have a list out already as a tentative schedule. For example, the bio courses that are offered this term are bio 1a03/1m03/2b03/2c03 this term. For psych, they have psych 1x03/1xx3/2e03/2t03/3f03/abnormal psych and a few others.. try to check the sites of the department now if you are curious

Yes. You can apply for OSAP if you are taking summer courses. However, I believe that less funding is available for the summer (i.e., you probably wont get any grants).

Spring/Summer 2010
Term 1:classes begin May 3
Term 2: classes begin June 23
