I how fast do work study positions fill up? I can imagine with so many students, any position on Oscarplus will have so many applications in a day alone.

Maybe someone with experience can tell me, Is there a chance to get an interview late August ? or am I already too late ?

Is it different for different positions? let's say for a research assistant job, how likely is it get filled up in the first week?

It seems noone knows, maybe those who have had interviews can just post that they have had one. That way I can get an idea as to how fast the positions fill up.

They fill up super-fast, especially the highly-coveted research positions. It's always worth a try, but chances are if it's nearing the deadline to apply you're already too late. They tend not to wait until the deadline before offering interviews, they just do it as people apply.
