Well, a lot of second year electives you can't take unless you're already in second year.
That being said, here are the ones I know of:
- Gemstones
- Natural Disasters
- Indo European Myth
- Pop Music

Great... I'm in a dilemma now. I'm in 2nd year and one of the electives I chose was "Cults in North America", which discusses things like Scientology, Satanism, etc. I can see that course being a "moderate" on the difficulty scale, but I'm actually kind of interested to learn about it. But now that you've listed things like "Pop Music", I'm not so sure if it's worth it!

My housemate in religious studies took Cults two years ago and wasn't all that impressed. She said it was fairly easy (granted its her major), though.
There is also English/2J03 Pop Culture which they reconmend to non-English students.

Indo-Euro-Myth you're not given your test back. You can see it, if you request but you're not allowed to keep it.
And some of the Geo classes aren't that easy...
