Not my invention or anything, but its the basic recipe:
Scalloped Potatoes
Serving Size: approx 4-6 people
Need:
6 medium potatoes, sliced into 'coins' about 1/4 inch thick
2 1/2 cups of Milk
3-4 tbsp Butter
4 tbsp Flour
Small onion, chopped into tiny pieces
Shredded Cheddar Cheese
Bacon (optional)
Salt and Pepper (to taste)

1)Slice potatoes into 'coins'
2) Heat the butter in a saucepan over medium heat, add the flour, slowly add the milk so that the mixture can thicken up. Stir constantly.
3) Add salt and pepper, onions (finely chopped) (and cooked/crumbled bacon-optional) to mixture/
4)Grease a casserole dish
5) place one layer of sliced potatoes in the casserole dish
6)pour some of the saucepan mixture onto the first layer of potatoes. Add a layer of cheese. Place another layer of potato slices, pour some mixture, add cheese, etc.
7)Repeat until mixture is used up.
8)Cover and bake for about an hour at 350 degrees F.

I made these the other day=soooo good

I normally cut this recipe in half, since I normally only cook for myself, and save the other half for left overs.

Lemon Chicken
3 or 4 chicken breasts
1/2 cup lemon juice
1 tsp dried oregano
2 cloves of garlic, minced
1/2 tsp salt
black pepper
1/2 tsp paprika

Put chicken in a baking dish. Mix everything together and poor over chicken. Marinade in fridge (not necessary - I never do this). Cook at 325 degrees for 30 minutes covered. And then uncover it, and cook for another 30 minutes.

Sure!

Here's another recipe that I make whenever I'm going somewhere and dessert is needed. I'm not a fan of cheesecake, but everyone I make these for loves them! I got the recipe from the website of whatever company makes Oreos.

Oreo Mini Cheesecakes

2 packages cream cheese, softened
1/2 cup sugar
2 eggs
12 Oreo cookies (I normally end up needing more than just 12)
melted chocolate chips

1) Preheat oven to 350 degrees
2) Beat cream cheese and sugar into bowl with electric mixer on medium speed until well blended
3) Add eggs one at a time, beating on low speed until blended
4) Place 1 cookie in bottom of 12 paper-lined muffin cups. Fill cup 3/4 of the way with cake batter
5) Bake 20 minutes or until centres are almost set. Cool. Refrigerate 3 hours or over night
6) Drizzle with melted chocolate

Quesadillas

olive oil
1-2 cloves garlic minced
1 medium red onion chopped
1 cup sliced mushrooms
2 cups baby spinach
1 Tbsp taco seasoning
4 tortillas
shredded cheese

1. heat frying pan to med-hi and add enough olive oil to cover bottom of pan.
2. add chopped red onion and garlic
3. cook until onions are see through, make sure to stir it often
4. add mushrooms
5. cook until mushrooms release their juices and start to brown
6. add taco seasoning and mix well.
7. toss in spinach and cook to taste ( i like it thoroughly wilted)
8. put half of the mixture on a tortilla with some shredded cheese. put a second tortilla on top and melt cheese.
method 1: put on cookie sheet in oven at 400C for 5-10 min or until tortilla is golden brown.
method 2: put in toaster oven on 'toast' until tortilla is browned
method 3: put in microwave on high for 2-3 min until cheese is melted.

serves 2

optional: you can add precooked chicken after step 5 if you want. make sure it is warmed through before moving on

here's one we use, its adapted from a cabbage roll recipe, filling, easily versitile and delicious.

Cabbage Casserole (makes for 6)

8 large cabbage leaves
1 lb lean ground beef
1tb worchester sause
1 green or red pepper, chopped
1 can condensed tomato soup
1/2 large onion, corsely chopped
1 tb sliced garlic
1 cup uncooked brown rice
1 egg
1/2- 1 cup cheddar cheese
1/2 cup milk
pepper (optional)
1 tb chili powder (optional)


1. cook rice as directed, set aside
2. preheat oven at 350
3. place 4 cabbage leaves in your casserole dish, if they dont lie down nicely steam leaves/ soak in warm water for 5 min.
4. brown beef and drain
5.add garlic, pepper, spices and onion and cook till onion begins to turn transparent
6. combine egg, milk worchester sauce and rice in a bowl while adding the condensed soup to the beef
7.combine rice and beef mixtures
8.spoon mix into casserole dish on top of cabbage and smooth out
9.add cheese
10.cover with 4 more cabbage leaves
11. cook for 1 hr.

you can use white rice too if you want and omiting either the egg or the cheese doesnt hurt it at all if you dont have them on hand, the egg just helps it stay together better. also the number of cabbage leaves are approximate depends on the size of the leaves and your dishes.

This recipe courtesy of Tom Venuto:

High Protein Apple Cinnamon Pancake:

Ingredients:
  • ¾ cup Quaker quick oats or old-fashioned oatmeal
  • 4 egg whites
  • 1/2 apple, diced
  • 1 scoop protein powder
  • 1 Tsp. Cinnamon

    Yield: 1 large pancake

Nutrition Info:
  • Serving Size: 1 pancake
  • Calories: 423
  • Protein: 39.5 g
  • Carbs: 53.5 g.
  • Fat: 6 g.

Cooking Directions:

1.) Put all ingredients together in a mixing bowl. Stir until the mixture has a semi-liquid pancake-batter-like consistency.

2.) Spray some non-stick spray on a frying pan and pour the mixture into the pan.

3.) Cook on medium heat. When one side is lightly browned and solid enough to flip, turn the pancake over with a spatula and cook the other side until lightly browned and firm.

If you're not interested in high protein skip the protein powder. However, it does give the pancake more flavour (Vanilla protein powder yummy ).
