I am planning to enter the Kinesiology program and there is not enough prerequisites to fulfill both Bio, both Chem, etc in first year. So if I were to take some of them second year as my electives, do professional schools view this in a certain way or not count them? Idk, someone told me something like this so I was just kind of worried because then I would need to do a lot of summer courses..

They don't care. Some may require you to take a certain amount of upper year courses, and they might raise an eyebrow if most of your courses in 3rd and 4th year are 1st year courses, but in general they don't care. Look at the schools you're interested in for specifics, since there aren't blanket "professional school" rules.
