At the end of every week, I would spend a day on the weekend re-writing all of my notes for the week as well as filling in any gaps I missed in lectures and/or emailing the prof for clarification.

I did that in first year but it became way too time-consuming. I eventually only rewrote notes that were too messy to read. I find that for many courses, it's helpful to just create a summary of important concepts for test studying purposes, but ALWAYS also keep the full notes for reference!
