while I was completing my course selection, I found that ENGINEER 1P03 was offered in only the 3rd term... Is that or was that same for you guys... I was wondering if there is any way I could take it in term 2 or term 1... because I don't want to be coming to school in summer just for one course...

Term 3 means it spans semesters 1 and 2, and not that it's part of the summer timetable. Don't worry, I only learned this too about a week ago :p
