Grab whole wheat bread and make a sandwich out of leftovers.
It works well when you have any cooked veggies, grilled meat, fish. Just add some extra garnish like lettuce, tomato and whatever condiments you like.
Canned foods are also good for lunch, like canned fish or beans, because they're less likely to go bad while they're sitting in your bag and not in the fridge.
Bean salad is easy - you use a can of whatever beans you like, e.g. chickpeas, some olive oil, and chop up any vegetables you have. Or get canned fish, add mayo, mix it up, and eat it with crackers or bread.
