As Jeremy said, it is merely tradition. However, that does not mean that the new motto could be in another language; the University of Pennsylvania changed their motto several times to fit the "feel" of their university. It could be kept in Ancient Greek to maintain tradition, but it could also be in Latin, English, or even German. Considering Mac's multicultural nature, I would personally like to have a motto in Sanskrit.

I kinda like All things cohere in each other or coherent together, we achieve. Something that uses a part of the old motto.

(I know this may not be great but I didn't put much thought into creating new ones)

I like that idea a lot - I'll get back to you with a translation after I consult my notes for Ancient Greek conditional sentences.
