I'm returning for a second degree in Economics and looking for any recommendations on courses (especially 3rd/4th year) to take.

So far I've completed 1B03, 1BB3, 2G03, 2H03, and 2J03 in my first degree.

Really depends on your interests.

The easiest ones I've taken (other than the ones you listed) are 2D03, 2P03, 3HH3 and 3T03.

The ones I learned the most from were 2K03, 3Q03 and 3D03.

The only one I hated was 3K03.
