ASTRO - allows you to access the contents of your SD on your phone
Handcent - messaging app
ADWLauncher - different UI
SwipePad - opens up a specialized app drawer than you pick
Clockr - cool minimalistic clock
Advanced Task Killer - closes apps
3GWatchdog - keeps tabs on your data usage

Dolphin Browser Mini - replaces the limited stock Android web browser.

Whatsapp - cross-platform free SMS app I use to text my friends who're on iphones and blackerries.

HIIT Interval Training Timer - great for when you're at the gym and need to set preset times for high intensity interval training like sprinting or Tabata.

... and ADW LauncherEX. Duck Hunt is awesome, Opera Mobile is really good for compressing data and potentially saving you money, and App Hunter is fantastic for the purpose of this thread. If you're a musician, Chordbot is good for songwriting, and Gmote is pretty cool to control your music with your phone.

Gingerbread launcher, advanced aapp killer, android system info, sms backup+, and Mercury mobile.

Thats about all I use..

Not sure if android has this but Logmein (allows you to access your computer from anywhere truly amazing)
and the frost wire app not sure what its called but its on their website and it allows you to download music just like frost wire or lime wire.

I haven't! I'll pick it up ASAP. I have an HTC Desire though... so i'd probably have the same multitouch issues as you :'(

Bubble Blast 2
- simple puzzle game
Angry Birds -
Gameboid Light - almost all GBA games on your phone no explanation needed
Fruit Slice - free rip off of the Fruit Ninja game
Speedx - uses accelerometer to avoid obstacles. pretty addicting

Apps:

XDA Developers
- if you browse XDA forums then this is a must
Album Art Grabber - great if your stock player doesn't get the album art when you transfer music
Minimilist Text - great to make your homescreen look awesome
Circle Battery Widget - 1% increments, looks great too
DroidLight - flashlight dev by Motorola
Google Sky Maps - if your into astronomy then get this
GTasks - syncs with gmail account and displays reminders also can add quick note/todo lists. its really simple to use and looks great too
Maverick - Best offline GPS. preload maps while online and it stores the tiles or you can dl maps
Barcode Scanner - pretty much self explainatory. best one on the marketplace imo.
SiMi Clock Widget - awesome date and time widget
Blue Skies Live Wallpaper -the best LW on the marketplace right now. looks amazing!!!

Speed Anatomy is a fun way to learn anatomy, which sounds lame at first, but is super helpful for anyone in Nursing/Health Science/ possibly Kin, but you guys go way more advanced later on.

The Hype! app is great if you love Hype Machine, and is my favorite way to listen to music through my phone (if you don't have unlimited data though, it might not be as good).

SwiftKey is a really awesome keyboard app that I find useful, the only app I've actually paid for on my phone.

And of course the Google Docs app! <3

Well i'm using Handcent and it's pretty wicked. Its super super super customizable and you can change the fonts, spacing and size and colours of everything. They're even themes other people have made that you can load up. My favourite part is the pop-up notifications though. Every time you get a text, a window pops up that says the text message, and you can reply in that same window.

The main reason i chose it though was the fact you can change the colours of the LED when you get a text message. I don't know if your phone has this issue, but mine certainly did; if my phone was charging my LED would be orange for 'charging' and green for 'finished'. However that LED would always override my text notification LED. With Handcent i can change that though, so pretty cool.

Also I forgot to mention:
- Pure Calendar widget (the only purchased app in my arsenal)
- Swype, have yet to try Swiftkey though.
