Is it possible to have your mcmaster email changed to something else?

ie. [email protected] a into [email protected]

You would have to contact UTS. They have an office on the second floor of BSB.

I believe they assign numbers to them because the email is (or has been in the past) taken.

if you read the post properly, the OP isnt just trying to remove the number.
smitherk38 (with no "z") to smitherkz...replacing 38 with z. It's possible the middle initial wasn't on the registration form to begin with and the OP would like to add it in, especially since it may mean getting rid of the numbers. There could be 38 smitherk people, but there might not be any smitherkz people.
