I was looking at some professional schools and they said the require previous health care experience.. is this just volunteer work? I don't understand!

It could mean a multitude of things. Because they know that not everyone can get a paid position, it could mean a job, volunteering experience, job shadowing, etc in a healthcare setting. So, hospital, seniors' centre, clinic, etc.

You should check whether it has to be in a clinical setting or not.
I did health promotion at McMaster for two years. Health promotion is an important part of health care as it enables people to take control of factors that can affect their health.
