How likely is it that we'll get into the classes we want?
For first semester, I'm changing quite a lot of my schedule. How probable is it that I'll get my desired classes? Do they fill up that quickly?

Well, certain classes are particularly popular but...people drop seats all the time. It's just about checking consistently. In terms of switching tutorials/etc, you're bound to get the time you want, just be consistent.
If it helps, while I didn't get Hatala last year, I got everything else I wanted.

I would compare it to choosing your courses. If your lucky you might get what you want but the popular spots fill up quickly.

And would 9:30 morning classes be considered popular?
And from what you're saying, I'm considering it's not different to get into your desired tutorial? So I should go for them last

Tutorials are just as annoying to try and switch around as courses.

If you're stuck in a shitty 8:30 tutorial or Friday tutorial try and switch those ASAP and even then the good options are usually full and you're stuck.

It's anywhere from like 15 to 40 students in tutorials. Average is 20-25, but that number is smaller in upper years I'd think depending on the class.

It's sometimes hard to get the times you want for tutorials, but tutorials are dropped and switched in a higher frequency than classes, so it's a bit easier.

Whats wrong with an 8:30 tutorial? are they brutal cuz u gotta get up in the morning?
