Taking courses after graduating?
If I were to take 2 or 3 courses after getting my bachelor's degree (4 years), would those grades be included in my 4th year GPA or 5th year? If it's included in my 5th year GPA, would some professional schools weigh that year's GPA more than my 4th year GPA?

They would be included as an additional year, unless you elect to not graduate (you have to choose to do so) after your fourth year.

As for the professional schools...it all depends on the school and how they look at GPA. Some is the last two years, some is the last two full years etc.

Out of curiosity, which do you think is preferred?

No idea. Depends on the program you're applying to, I would assume. Some are apparently more picky than others.
